Chori Pollo

Ingredients:
1 chicken breast
4 oz Mexican chorizo
4 oz marinade sauce (recipe below)
1/2 cup cooked rice
1/2 cup cooked refried beans
6 oz cheese sauce
oil or butter
For the marinade sauce:
2 hancho chiles
2 guajillos chiles
1/2 onion
2 cloves of garlic fresh
1 cup orange juice
juice of one lime
salt and pepper to taste
Directions:
- Butterfly the chicken very thin or ask the store butcher to do it for you.
- Place the chicken breast in a plate or a plastic container. Add the marinate sauce.
- In a hot skillet, add about 2 tablespoons of oil or butter. Place the chicken and cook for 2 minutes on each side.
- In another skillet, add the chorizo and cook for 3 minutes.
- You can use any rice of your choice. Same goes for the beans.
- Place the chicken on the plate and the chorizo on top of the chicken. Place the rice and beans next to the chicken and top with cheese sauce.
For the marinade sauce:
Add the chiles, onions, and garlic in a saucepan with hot water for 30 minutes. Then, place them in the blender and add the juices and salt and pepper. Blend until smooth.
